Asian Seared Scallops with Spinach - Jersey Girl Cooks



This Asian-style dish has fresh spinach and succulent scallops that have been seared. The soy sauce, ginger, and garlic flavors make the spinach taste great. Great for a quick and fancy meal!

Ingredients:

  • 12 large sea scallops
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 6 cups fresh spinach leaves
  • Salt and pepper to taste
  • Sesame seeds for garnish optional

Instructions:

In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic to make the marinade

Pat dry scallops with paper towels and place them in a shallow dish

Pour marinade over scallops, coating them evenly

Marinate for 15-20 minutes

Heat olive oil in a large skillet over medium-high heat

Remove scallops from marinade, reserving marinade

Add scallops to the skillet and cook for 2-3 minutes on each side until golden brown and cooked through

Remove scallops from skillet and set aside

In the same skillet, add spinach and cook for 1-2 minutes until wilted

Season with salt and pepper

Return scallops to the skillet, pouring any remaining marinade over them

Cook for an additional minute to heat through

Serve scallops and spinach immediately, garnished with sesame seeds if desired
