Ingredients:
- 6 potatoes, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
Put chicken broth, diced potatoes, diced onion, and minced garlic in a slow cooker
The potatoes should be soft after 6 to 8 hours on low heat or 3 to 4 hours on high heat
Using an immersion blender, blend the soup until it is smooth
If you want, you can leave some chunks in it
Add heavy cream and cheddar cheese shreds and mix until the cheese melts
Add pepper and salt to taste
Serve hot with chopped green onions and crumbled bacon on top
