Ingredients:
- 1 French bread loaf
- 1 cup cooked and shredded chicken
- 1/2 cup barbecue sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Instructions:
Preheat your grill to medium heat
Slice the French bread loaf in half lengthwise, then place both halves cut side down on the grill
Toast until lightly golden and crispy, about 2-3 minutes
Remove the bread from the grill and place on a baking sheet, cut side up
In a small bowl, mix the shredded chicken with barbecue sauce until well coated
Season with salt and pepper if desired
Spread the barbecue chicken mixture evenly over the toasted bread halves
Top with shredded mozzarella cheese, diced red onion, and chopped cilantro
Return the loaded bread to the grill and cook with the lid closed until the cheese is melted and bubbly, about 5-7 minutes
Remove from the grill, let it cool for a minute, then slice and serve
