PB and J Doughnuts



These PB and J Doughnuts are a fun take on a traditional sandwich pairing. They are ideal for breakfast or dessert because they are sweet and fluffy.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup peanut butter
  • 1/4 cup milk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup strawberry jam
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/4 cup crushed peanuts optional
  • Oil for frying

Instructions:

Mix flour, baking powder, granulated sugar, and salt together in a mixing bowl

Smoothly combine peanut butter, eggs, 1/4 cup milk, and vegetable oil in a separate bowl

Mixing until just combined, add the wet mixture to the dry mixture

In a deep pan, heat the oil to 350F 175C

Cut out doughnut shapes from the dough using a round cookie cutter or a doughnut cutter

The doughnuts should be carefully lowered into the heated oil and fried for two to three minutes on each side, or until golden brown

After removing the doughnuts, lay them out on paper towels to absorb any remaining oil

Strawberry jam should be heated for 20 seconds in a microwave-safe bowl to make it spreadable

Put a small amount of jam on each doughnut

To make a glaze, combine 2 tablespoons milk and powdered sugar in a different bowl

Each doughnut's top should be dipped in glaze, allowing any excess to fall off

Add some crushed peanuts to the glaze if you'd like

Before serving, let the glaze settle for a few minutes
