Asian Seared Scallops with Spinach - Jersey Girl Cooks



This Asian-style dish has fresh spinach and succulent scallops that have been seared. The soy sauce, ginger, and garlic flavors make the spinach taste great. Great for a quick and fancy meal!

Ingredients:

  • 12 large sea scallops
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 6 cups fresh spinach leaves
  • Salt and pepper to taste
  • Sesame seeds for garnish optional

Instructions:

In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic to make the marinade

Pat dry scallops with paper towels and place them in a shallow dish

Pour marinade over scallops, coating them evenly

Marinate for 15-20 minutes

Heat olive oil in a large skillet over medium-high heat

Remove scallops from marinade, reserving marinade

Add scallops to the skillet and cook for 2-3 minutes on each side until golden brown and cooked through

Remove scallops from skillet and set aside

In the same skillet, add spinach and cook for 1-2 minutes until wilted

Season with salt and pepper

Return scallops to the skillet, pouring any remaining marinade over them

Cook for an additional minute to heat through

Serve scallops and spinach immediately, garnished with sesame seeds if desired

Probiotic Lemonade Henry



A refreshing cocktail combining the tangy flavor of probiotic lemonade with the kick of vodka and triple sec.

Ingredients:

  • 1 cup probiotic lemonade
  • 1
  • 5 oz vodka
  • 0
  • 5 oz triple sec
  • Splash of sparkling water
  • Lemon wedge for garnish
  • Ice cubes

Instructions:

Fill a glass with ice cubes

Pour probiotic lemonade, vodka, and triple sec into the glass

Top off with a splash of sparkling water

Stir gently to combine

Garnish with a lemon wedge

Serve and enjoy!

Healthified Cowboy Turkey Burgers and Ranch Slaw



Healthified Cowboy Turkey Burgers are a tasty and lean take on the classic cowboy burger. They go well with tangy ranch slaw for a healthy and filling meal. Ideal for a BBQ without feeling guilty!

Ingredients:

  • 1 lb ground turkey
  • 1/4 cup oats
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded reduced-fat cheddar cheese
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 4 whole wheat burger buns
  • 1 cup shredded cabbage
  • 1/4 cup Greek yogurt
  • 1 tbsp ranch seasoning mix
  • 1 tsp apple cider vinegar
  • 1/2 tsp honey
  • 1/4 tsp paprika
  • 1/4 tsp black pepper

Instructions:

In a large mixing bowl, combine ground turkey, oats, diced onion, diced bell pepper, diced tomatoes, shredded cheddar cheese, chili powder, garlic powder, onion powder, salt, and pepper

Mix the ingredients until well combined, and form them into 4 burger patties

Preheat a grill or grill pan over medium heat and lightly oil the grates

Grill the turkey burger patties for about 6-8 minutes per side or until they are cooked through and have nice grill marks

While the burgers are cooking, prepare the ranch slaw

In a separate bowl, combine shredded cabbage, Greek yogurt, ranch seasoning mix, apple cider vinegar, honey, paprika, and black pepper

Mix until the slaw is well coated with the dressing

Once the turkey burgers are done, toast the whole wheat burger buns lightly on the grill

To assemble the burgers, place a turkey patty on the bottom half of each bun, and top it with a generous scoop of ranch slaw

Place the top bun on top and serve

Sun-dried Tomato and Olive Pasta



Sun-dried tomatoes, olives, and garlic-infused olive oil come together in this pasta dish to make a tasty and filling meal. It's quick and simple to make, so it's great for dinner during the week.

Ingredients:

  • 250g pasta of your choice
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup olives, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese for serving

Instructions:

Follow the directions on the package to cook the pasta until it is al dente

Remove the water and set it aside

Put olive oil in a pan and heat it over medium-low heat

For about one minute, until the garlic smells good, add the minced garlic

Cut up some sun-dried tomatoes and put some sliced olives in the pan

Stir every now and then for another two to three minutes

When the pasta is done, add it to the pan with the tomato and olive mixture

Toss to mix and heat all the way through

Add pepper and salt to taste

Add fresh basil leaves and grated Parmesan cheese on top while the dish is still hot

Ingredients:

  • 1 French bread loaf
  • 1 cup cooked and shredded chicken
